Preserved Meat Drying Reference:

1. Isokinetic drying stage. It took 5 to 6 hours, and within 2 hours after the material was loaded into the drying room, the temperature quickly rose to 60℃ ~ 65℃, no moisture discharge. After preheating time, adjust the temperature to 45℃ ~ 50℃, humidity is controlled within the range of 50% to 55%.
2. Decelerate drying stage. The temperature is controlled at 52 ℃ ~ 54 ℃, the humidity is controlled at about 45% and the time is 3 to 4 hours, better alternately in cold and heat drying.

3. Rapid drying stage. Rise the temperature to 60℃ ~ 62 ℃, the drying time is controlled at 10 to 12 hours, and the relative humidity is controlled at about 38%. The final drying humidity of sausage is controlled at about 17%.
